Whenever I go to strand, I make it a point to stop for some whole, fresh fish near the beach. There’s nothing really better than fresh fish and I created this recipe because it is easy and oh so lemony, our harissa paste just takes it to the top with its rich, fiery flavour!

INGREDIENTS
- 1 whole fish, cleaned and gutted
- 1-2 tbsp Hungry Co. Harissa paste
- 3 cloves garlic, finely chopped or crushed
- 2 tsp mixed herbs
- Salt & black pepper, to taste
- 2-3 lemons (sliced + juice)
- 1 medium onion, sliced
- 2 tbsp oil (vegetable or olive oil)
DIRECTIONS
- Preheat the oven by setting to 180°C.
- Pat dry and score both sides of the fish.
- Make the marinade by mixing harissa paste, garlic, mixed herbs, salt, pepper, lemon juice and oil.
- Season generously
- Rub the marinade all over the fish, inside the cavity and into the cuts.
- Stuff the fish with onion slices and lemon.
- Add extra lemon slices on top if you want.
- Place the fish on a lined tray or oven dish.
- Bake uncovered for 15-20 minutes, depending on size, until the flesh flakes easily and the skin is lightly crisped.
